Recipe of the Month: Chicken enchilada skillet
One-pot meals are our favorite type of dinner to make. This chicken enchilada skillet is especially delicious because it is saucy and cheesy, and the fact that is ready in under 30 minutes is a major bonus.
We packed this skillet with protein from rotisserie chicken and black beans. You will have no problem finishing this skillet, but if you do have leftovers, this skillet is more flavorful the next day!

Ingredients You’ll Need
Rotisserie chicken: keep things easy by using shredded, store-bought rotisserie chicken. You can also use any cooked shredded chicken you find at the grocery store.
Enchilada sauce: our favorite store-bought enchilada sauce is Frontera brand, but any brand will do.
Tools You’ll Need
A few tips
Be sure you use a large skillet, it’s in the name! We suggest using a large and deep skillet that has a cover. A deeper skillet makes it easier to mix without making a mess.
Remember that the type of enchilada sauce you use will vastly impact the flavors and taste of the skillet.
You can add more vegetables to the dish if you’d like to. Peppers and mushrooms are great options.

Each month we select a charity to support. This month we are supporting the National Alliance to End Homelessness. Homelessness can happen to families of all kinds. Natural disasters, conflict, poverty, and mental illness are only some reasons why people face homelessness. Let’s support the National Alliance in their efforts to end homelessness.
We’ll be doubling the match from our giveaway winners to donate $400 to the National Alliance to End Homelessness to aid in their efforts.
